Change theodolite.com to theodolite.rocks

Now, that we have the domain theodolite.rocks, we should adjust our CRD definitions.

Additionally, as our API is rather unstable at the moment, we should use a version such as v1beta for the CRDs again. This should be possible since by changing the domain, we're creating new CRDs anyway.
