Upgrade Quarkus version

With version 1.12 something has changed regarding the creation of jars: https://quarkus.io/blog/quarkus-1-12-0-final-released/

We might want to scaffold an additional new project and see what has changed in /src/main/docker, so we can update our implementation accordingly.
