Remove hint to adjusted Confluent Helm charts

Missing functionality is now merged in the upstream repo (https://github.com/confluentinc/cp-helm-charts/pull/261), so our fix is no longer required.

For a "real" fix, next version of Confluent Platform has to be released, but for now we could start by pointing to the original repo.

While the new version was finally released, this release has a new issue, resulting in Kafka metrics not properly shown in Grafana.

For now, this Helm chart should be used as already stated in the docs: https://github.com/SoerenHenning/cp-helm-charts/releases/download/v6.0.1-1-JMX-FIX/cp-helm-charts-0.6.0.tgz
